Soubise Sauce:
Ingredients:
1qt Béchamel Sauce
1lb Finely Diced Onions
2oz Butter
Method:
Sweat finely diced onions in butter without browning them. Simmer together with béchamel sauce for 15 minutes and strain through a Chinois.
